Plot selection on chalky, clay and granite soils from Roussillon. Each plot follows a strict procedure concerning pruning, maximum leaf surface, maximum yield and the perfect sanitary state until harvest.
Grape varieties
50% Syrah, 25% Grenache Noir, 25% Carignan.
Production method
A part of the syrah and all of the carignan are vinified in carbonic maceration for 7 to 10 days at 25°C. The rest of the syrah and all of the Grenache noir are vinified in a pre-cooled maceration after being de-stemmed and crushed. The wines are aged for 6 months after the malolactic fermentation.
Description
The colour is a deep garnet red with bright purple tints. The nose is intense with ripe burlat cherries, blackberries and blackcurrents. The attack on the palate is full and fruity with soft rounded tannins, with a long lingering finish.

Enjoyed at any time or served with charcoal grilled meat, salads and soft matured cheese..
