A selection of vines grow on clay-calcareous, schist and sandstone soils in Roussillon.
Grape varieties
60% Syrah, 25% Grenache Noir, 10% Carignan, 5% Macabeu.
Production method
The musts from the Syrah, Grenache Noir and Carignan grapes are obtained after short maceration with skins for a maximum of 10 hours at 20°C in tanks or by drawing off. The Macabeu must is obtained through direct pressing. The musts are then heavily settled and fermented at low temperature with special yeasts to develop the best fermenting aromas for these grapes.
Description
The colour is sweet pink with blue tints. The bouquet is straightforward and fruity with notes of young red berries such as raspberry and redcurrant and also grenadine. In the mouth it is fresh and full, the fleshiness balances the wine as a whole giving it a voluminous feel. The finish is long, fruity and perfectly echoes the bouquet.
Serving suggestion
Serve chilled as an aperitif or with grilled fish and light meals (salads, cured meats) or grilled meat.
Serving temperature
Serve at 11°C
