Soil types:
The grapes for this wine are grown on a range of deep soils in languedoc-Roussillon: granite sand, stony, schist alluvium and sandy-loam. Strict specifications are applied to each vineyard in terms of viticultural management - pruning, leaf exposure, yield and vine health monitoring - and the aroma and flavour profile of the wine.
Varietal range:
65% Pinot noir, 32% Cinsault, 3% Grenache
Winemaking
The fruit is harvested in the early hours of the morning to retain freshness.
It is crushed and delicately presses in an oxygen-free environment. The must then undergoes very thorough static settling followed by alcoholic fermentationat low temperatures. Direct-to-press method.
Ageing:
In full tanks for a few months. The wine is bottled young to fully preserve its fresh aromas.
Tasting notes
Brilliant pale pink with silvery highlights.
The delighful fresh nose reveals nots of redcurrants, raspberry and white peach.
The palate shows impeccable elegance and reveals beautiful notes of crisp, mineral-driven red fruits with a long and incredibly fresh finish.
Storage capacity:
For full aromatic enjoyment, it should be drunk young, within the first two years.
Food pairings:
Ideal as an aperitif, this rosé is the ideal companion for summer barbecues, grilled foods, Mediterranean salads, basque-style chicken, sushi, Catalan Escalivada and cold meat platters.
Serving temperature:
Serve at between 8 and 10°C
