Selected vineyards are located in the north-east of the Pyrenees-Orientales department and planted on alluvium terraces with a substrate of sediment from the Pliocene and Quaternary epochs.
100% Grenache noit
After the crop has been destemmed and crushed, it then underges on-skin maceration for a few hours. After pressing, the free-run juice is cold racked. Alcoholic fermentation starts after selected yeast has been added at controlled temperatures. Half way through fermentation, neutral wine-based spirits are added to retain some of the natural grape sugars and arrest fermentation.
In full oxygen-free tanks.
The wine reveals a bright, intense, strawberry-pink hue with bluish tints. The nose is refined and complex and offers up notes of cherry, crisp red berry fruits, sweet almond and abundant freshness. The attack on the palate is lush, elegant and laden with fruit. The finish is generous and echoes the nose perfectly.
Drink within a year of harvest
Drink as an aperitif on its own or as a cocktail with fruit juice, sparkling water and sparkling white wine. Makes the ideal partner for fuit-based dessert: strawberry charlotte, lemon tart, almond cake, gariguette strawberries with mint, red and black berry fruit crumble with star anise... This Rivesaltes rosé also pairs surprinsingly well with sheep's cheese served with black berry jam.
Serve at between 10°C and 13°C
