Soil
Maury sec, wich was launched in 2011, is the youngest Roussillon growth. It stems from a desire by wine growers to highlight the characteristic features of the area, particularly Grenache noir, the king of the appellation's varietal range. The schist and black marly soils strech over rolling hills in the heart of the garrigue, embracing 4 villages in the upper Agly valley.
Grape varieties
80% Grenache noir, 20% Carignan
Production method
Selected vineyards are harverested by hand at the peak of ripeness. The small proportion of Carignan is fermented using carbonic maceration. Grenache noir undergoes traditional maceration lasting a few weeks with gentle, regular extraction by pumping over.
Ageing
One year in tanks to soften the tannins and reveal aroma.

Storing
Can be enjoyed from now on but will cellar fo up to three years.
Serving suggestion
Excellent with beff tournedos served with porcini mushrooms or pigeon tagine with dried fruit. it is also the perfect match for preserved saddle of lamb with thyme. Try it with veal kidneys and junper berries. Fourme d'Ambert or pelardon goat's cheese round off the meal.
Serving temperature
Serve at between 16 and 18°C
Ultimate pairing choice: Duck breasts with a spicy, coffee-flavoured sauce and fig chutney.
