Soil
Between the sea and the mountains, the Collioure appellation stands on narrow terraces atop brown schist soil. It enjoys a Mediterranean climate with over 300 days of sunshine a year and rare but torrential rainfall. The closeness of the sea and the schists gives Collioure wines a particular character: distinguished and elegant.
Grape varieties
Grenache Noir, Syrah, Mourvèdre.
Production method
subjected to an initial cold maceration. The process then continues with traditional maceration for a very long period. The juices are extracted by gentle and regular remontage.
Ageing
In vats.
Description
Pretty garnet colour with purple tints. An intense and refined bouquet over ripe fruit and spice notes alongside saline notes typical of this terroir. Round, creamy and very complex on the palate.
Serving suggestion
This wine is delightful served with Oriental or Mediterranean cuisine. It will also go very well with tuna steak, braised pork cheeks or strong cheeses.
Serving temperature
Serve between 14 and 16°C.
