Varietal range
70% Grenache noir, 30% Syrah
Winemaking
The grapes for this outstanding wine are harvested at peak ripeness, determined by tasting the fruit. The varietals are fermented separately. When the Syrah and Grenache reach the winery, they are destemmed and crushed separately and then macerate traditionally. Extraction involves gentle, regular pumping over.
Ageing
The wine is matured in tanks for 8 months.
Tasting notes
Dark garnet with dark purple highlights. The fresh, intense nose reveals a cornucopia of crunchy blackberries, raspberries and cherries in brandy with a touch of liquorice. The palate is dense and fruity and offers up beautiful roundness boasting savoury tannins and a freshness that carries the nish over substantial length.
Food pairings
This unique wine pairs with gourmet foods such as slow-roasted leg of lamb, beef llet with morel mushrooms, duck with cherries and lamb tagine with prunes.
Serving temperature
Serve between 16 and 18°C, ideally decanted.
