Soil types:
Vines for this wine grow on pebble-strewn soils, schist and stony alluvium. The vineyards are located in the Languedoc-Roussillon plain and on hillsides inland from the coast.

Winemaking
The grapes are harvested at peak ripeness.
The Syrah undergoes pre-fermentation cold soaking for 48 hours to promote the development of fresh, fruity aromas. Fermentation at 25°C lasts for between 10 to 20 days.
Ageing:
In tanks with early bottling to fully preserve aromatic freshness.
Tasting notes
Beautiful garnet with dark purple tints.
Charming nose revealing an intense bouquet of cherries, blackberries, violets and liquorice.The same extensive array of aromas flows through to the palate which is ample, mouth-filling, dense and nicely structured by velvety tannins with freshness driving the finish.
Storage capacity:
This wine will cellar for four years.
Food pairings:
This Syrah makes a wonderful partner for everyday meals, beef bourguignon, coq au vin, roast chicken, thinly sliced duck, wild boar pâté and Provencal-style veal paupiettes, not forgetting medium-mature cheeses.

Serve between 14 and 16°C
