Canigou Montagne sacrée des Catalans
A.O.P Côtes du Roussillon Villages Oak-aged
Soil
The vines for this wine are grown in long-standing vineyard plots in the Agly area, in the north of the Pyrenees-Orientales department. The soils are very high quality brown schist. The vines grow on gently sloping, arid hillsides that bask in sunshine and enjoy ideal wind exposure
Grape varieties
Syrah, Grenache noir
Production method
The top-quality vineyard sites selected for this wine are harvested at peak ripeness, which is defined on the basis of berry tastings. The grape varieties are vinified separately. The Grenache and Syrah are destemmed and crushed on arrival at the winery then macerate as per tradition. Extraction is achieved through gentle, regular pumping over.
Ageing
The wine is matured in new oak barrels for 9 months.
