Soil
The vineyards for this wine are located in the Agly valley, near Latour de France. The vines are planted on schist soils over rolling hills facing East-West. Only the finest fruit is selected.
Grape varieties
Syrah, Carignan and Grenache noir.
Production method
The finest vineyards are selected then harvested by hand. The Carignan undergoes carbonic maceration for approximately three weeks. For the Grenache and Syrah, the grapes are destemmed, crushed and macerated traditionally for over four weeks
Ageing
In tanks for several months before being bottled in our cellars
Description
Deep garnet-red with bluish tints. Intense, complex nose marked by notes of jammy red fruits, garrigue herbs and spices. The palate is rich and lush and offers up aromas of raspberry and cherry supported by soft tannins. Wonderful persistence on the finish
Storing
Drinking well from now on but can be cellared for 3 to 4 years.
Serving suggestion
Ideal with meat pies, grilled rib steak with a pepper sauce, roast lamb shoulder with spices, jugged hare or young wild boar casserole, it also makes a superb partner for a platter of mature cheeses.
Serving temperature
Serve between 16 and 18°C.
